An easy and delicious stuffed chicken breast recipe filled with mushrooms, spinach, and cheese, perfect for impressing your guests without spending hours in the kitchen.
Ingredients
- 4 chicken breasts
- 2 cups mushrooms, chopped
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1/2 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped mushrooms and spinach; cook until mushrooms are soft.
- Stir in cream cheese, mozzarella cheese, thyme, salt, and pepper until well combined.
- Cut a pocket in each chicken breast and stuff with the mushroom mixture.
- Secure with toothpicks if necessary.
- Season the outside of the chicken with salt and pepper.
- In a skillet, sear each chicken breast on both sides until golden brown.
- Place the chicken in a baking dish and bake for 25-30 minutes or until cooked through.
- Let rest before serving.
