Description

A delicious and easy slow cooker beef stroganoff that allows the beef to cook for hours while you relax. Serve it with egg noodles or rice for a comforting meal.


Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Season that beef with salt and pepper.
  2. Sauté onions and garlic in a skillet over medium heat until translucent.
  3. Brown the seasoned beef in the skillet until it forms a crust.
  4. Transfer the beef and onions to the slow cooker, add mushrooms, broth, and Worcestershire sauce. Stir well.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Stir in the sour cream before serving.

Notes

For best flavor, avoid skipping the browning step. You can substitute Greek yogurt for sour cream or use other vegetables if desired.
