Description

A comforting and simple potato soup recipe that’s perfect for a quick meal.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Chopped chives or green onions for garnish (optional)


Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until translucent.
  2. Toss in the diced potatoes and pour the broth over them. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth, or use a potato masher for a chunkier texture.
  4. Stir in the milk or cream and season with salt and pepper. Heat through before serving.
  5. Garnish with chives or green onions if desired.
