A comforting and flavorful beef stew that cooks itself in a crockpot, perfect for lazy days.
Ingredients
- 2 lbs beef stew meat
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Brown the beef stew meat on all sides.
- Transfer the browned beef to the crockpot.
- Add the potatoes, carrots, onion, garlic, thyme, rosemary, salt, and pepper to the crockpot.
- Pour the beef broth over all the ingredients.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Serve warm with crusty bread or mashed potatoes.
Notes
Don’t overload the crockpot and ensure to brown the meat for the best flavor.
