Description

A comforting and flavorful beef stew that cooks itself in a crockpot, perfect for lazy days.


Ingredients

  • 2 lbs beef stew meat
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large skillet, heat olive oil over medium heat. Brown the beef stew meat on all sides.
  2. Transfer the browned beef to the crockpot.
  3. Add the potatoes, carrots, onion, garlic, thyme, rosemary, salt, and pepper to the crockpot.
  4. Pour the beef broth over all the ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. Serve warm with crusty bread or mashed potatoes.

Notes

Don’t overload the crockpot and ensure to brown the meat for the best flavor.
