A comforting one-pot dish featuring tender chicken, orzo pasta, and fresh spinach in a creamy broth.
Ingredients
- 1 pound chicken breast, diced
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup spinach, chopped
- 1 cup cream or milk
- Salt and pepper to taste
- Olive oil
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Introduce the diced chicken to the pot, seasoning it with salt and pepper. Sauté until the chicken is nicely browned.
- Stir in the orzo and chicken broth, bringing the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 10 minutes or until the orzo is cooked through.
- Next, stir in the chopped spinach and cream; allow it to cook for an additional 2-3 minutes until the spinach is wilted and everything is well combined.
- Serve warm topped with a generous sprinkle of grated Parmesan cheese.
