Description

A comforting one-pot dish featuring tender chicken, orzo pasta, and fresh spinach in a creamy broth.

Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup spinach, chopped
  • 1 cup cream or milk
  • Salt and pepper to taste
  • Olive oil
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Introduce the diced chicken to the pot, seasoning it with salt and pepper. Sauté until the chicken is nicely browned.
  4. Stir in the orzo and chicken broth, bringing the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 10 minutes or until the orzo is cooked through.
  6. Next, stir in the chopped spinach and cream; allow it to cook for an additional 2-3 minutes until the spinach is wilted and everything is well combined.
  7. Serve warm topped with a generous sprinkle of grated Parmesan cheese.

Notes

Consider adding bell peppers or zucchini for extra nutrients, or a splash of white wine for added flavor.
