Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and minced garlic; sauté until golden and fragrant (3-5 minutes).
  3. Stir in long-grain white rice; toast for 2-3 minutes.
  4. Add drained diced tomatoes and broth; mix in chili powder, cumin, salt, and pepper.
