- 2 cups long-grain white rice
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained

- 1 teaspoon cumin
- Salt and pepper to taste

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic; sauté until golden and fragrant (3-5 minutes).
- Stir in long-grain white rice; toast for 2-3 minutes.
- Add drained diced tomatoes and broth; mix in chili powder, cumin, salt, and pepper.
