Description

A creamy and cheesy loaded potato soup that’s easy to make and perfect for chilly nights.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • Salt and pepper, to taste
  • Chives for garnish


Instructions

  1. In a large pot, sauté the onions and garlic over medium heat until softened, about 3 minutes.
  2. Add the diced potatoes and chicken broth. Bring to a boil.
  3. Reduce heat and simmer for about 15 minutes or until the potatoes are tender.
  4. Mash some of the potatoes with a potato masher or fork for a creamy texture. Stir in the milk and cheddar cheese.
  5. Add salt and pepper to taste, adjusting to your preference.
  6. Serve hot, topped with crumbled bacon and chives.

Notes

For a vegetarian version, use vegetable broth and omit the bacon.
