A warm, hearty soup that’s super simple to whip up, perfect for cozy nights.
Ingredients
- 1 cup lentils
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the carrots and potatoes, cooking for another 5 minutes, stirring occasionally.
- Stir in the lentils, cumin, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 25 to 30 minutes, or until the lentils and potatoes are tender.
- Adjust seasoning as needed, and serve hot, garnished with fresh parsley.
Notes
For extra flavor, avoid skipping the sautéing step. You can also blend the soup for a creamier texture.
