Description

Ingredients

  • 1 cup lentils
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the carrots and potatoes, cooking for another 5 minutes, stirring occasionally.
  3. Stir in the lentils, cumin, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for about 25 to 30 minutes, or until the lentils and potatoes are tender.
  6. Adjust seasoning as needed, and serve hot, garnished with fresh parsley.

Notes

For extra flavor, avoid skipping the sautéing step. You can also blend the soup for a creamier texture.
