A quick and delicious chicken pot pie casserole that feels gourmet and is easy to prepare.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated cheese (optional)
- 1 package refrigerated biscuit dough
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the chicken, mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased 9×13 inch baking dish.
- If desired, sprinkle the grated cheese on top of the chicken mixture.
- Cut the biscuit dough into quarters and arrange the pieces evenly on top of the filling.
- Bake for 30-35 minutes, or until the biscuits are golden brown and cooked through.
- Let it cool a bit before serving.
