Description
A simple and delicious hobo casserole made with ground beef and layers of thinly sliced potatoes, topped with cheese for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4-5 medium potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup beef broth or water
- 1/4 cup milk (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium-high heat, add olive oil and cook ground beef until browned, about 7-10 minutes. Drain excess grease.
- Add chopped onion and sauté until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute.
- Mix in Italian seasoning, paprika, salt, and pepper.
- Lightly grease a 9×13 inch baking dish and spoon the beef mixture into the dish. Layer sliced potatoes on top and season with salt and pepper.
- Pour beef broth or water over the potatoes and drizzle with milk if using.
- Sprinkle cheddar and Parmesan cheeses over the top. Cover with aluminum foil.
- Bake for 45 minutes. Remove foil and bake uncovered at 400°F (200°C) for another 15-20 minutes until cheese is melted and golden.
- Let rest for 5-10 minutes before serving, garnished with fresh parsley if desired.

This dish is versatile; feel free to add any leftover veggies or different types of cheese you have on hand.
