Description

A simple and delicious hobo casserole made with ground beef and layers of thinly sliced potatoes, topped with cheese for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4-5 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, add olive oil and cook ground beef until browned, about 7-10 minutes. Drain excess grease.
  3. Add chopped onion and sauté until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute.
  4. Mix in Italian seasoning, paprika, salt, and pepper.
  5. Lightly grease a 9×13 inch baking dish and spoon the beef mixture into the dish. Layer sliced potatoes on top and season with salt and pepper.
  6. Pour beef broth or water over the potatoes and drizzle with milk if using.
  7. Sprinkle cheddar and Parmesan cheeses over the top. Cover with aluminum foil.
  8. Bake for 45 minutes. Remove foil and bake uncovered at 400°F (200°C) for another 15-20 minutes until cheese is melted and golden.
  9. Let rest for 5-10 minutes before serving, garnished with fresh parsley if desired.
