Ingredients
- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 batch of whipped frosting
- Chocolate chips (for eyes)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
- Using whipped frosting, pipe ghost shapes onto each cupcake.
- Place chocolate chips on for eyes to complete the ghost look.
Notes
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Cupcakes can be frozen without frosting for up to 3 months.
