Description

A creamy, savory ground beef stroganoff that’s quick and easy to prepare, perfect for a comforting dinner.


Ingredients

  • 1 lb ground beef
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 3 garlic cloves, minced
  • 8 oz baby bella mushrooms, sliced
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 1/3 cup white wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups beef broth
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 teaspoons Dijon mustard
  • Ground black pepper, to taste
  • 8 oz egg noodles
  • Chopped fresh dill or chives (optional)


Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef, sprinkle with salt and pepper, and cook until browned. Transfer to a bowl and set aside.
  2. In the same skillet, add olive oil, diced onion, and sliced mushrooms. Sauté for about 7-10 minutes until softened and slightly browned. Stir in minced garlic and tomato paste, cooking for another 1-2 minutes.
  3. Sprinkle in the flour and stir. Slowly pour in the white wine, if using, and let it simmer for 2-3 minutes. Add Worcestershire sauce and beef broth, bringing to a simmer. Return the beef to the skillet and cook for 10 minutes.
  4. Lower the heat, stir in heavy cream, sour cream, and Dijon mustard until smooth. Do not boil.
  5. Cook egg noodles according to package directions, drain, and set aside.
  6. Spoon the stroganoff mixture over the egg noodles and sprinkle with chopped dill or chives, if desired.

Notes

For a healthier option, use ground turkey or chicken instead of beef. You can substitute Greek yogurt for sour cream.
