- 1 lb ground beef
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 medium white onion, diced
- 3 garlic cloves, minced
- 8 oz baby bella mushrooms, sliced
- 1 tablespoon tomato paste
- 2 tablespoons all-purpose flour
- 1/3 cup white wine (optional)
- 1 tablespoon Worcestershire sauce
- 1 1/2 cups beef broth
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 2 teaspoons Dijon mustard
- Ground black pepper, to taste
- 8 oz egg noodles
- Chopped fresh dill or chives (optional)
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef, sprinkle with salt and pepper, and cook until browned. Transfer to a bowl and set aside.
- In the same skillet, add olive oil, diced onion, and sliced mushrooms. Sauté for about 7-10 minutes until softened and slightly browned. Stir in minced garlic and tomato paste, cooking for another 1-2 minutes.
- Sprinkle in the flour and stir. Slowly pour in the white wine, if using, and let it simmer for 2-3 minutes. Add Worcestershire sauce and beef broth, bringing to a simmer. Return the beef to the skillet and cook for 10 minutes.
- Lower the heat, stir in heavy cream, sour cream, and Dijon mustard until smooth. Do not boil.
- Cook egg noodles according to package directions, drain, and set aside.
- Spoon the stroganoff mixture over the egg noodles and sprinkle with chopped dill or chives, if desired.
Notes
For a healthier option, use ground turkey or chicken instead of beef. You can substitute Greek yogurt for sour cream.
