This Easy Crockpot Beef Stroganoff is hearty, creamy, and perfect for nights when you want comfort food without the fuss.
Ingredients
- 3 pounds Beef chuck roast
- 2 medium Yellow onions
- 8 ounces Cremini mushrooms
- 3 cloves Garlic
- 4 cups Beef broth
- 2 tablespoons Worcestershire sauce
- 1 cup Sour cream
- 2 tablespoons All-purpose flour
- 1 tablespoon Dijon mustard
- to taste Salt
- to taste Black pepper
- 12 ounces Egg noodles
- 2 tablespoons Fresh parsley
Instructions
- Slice the chuck roast into chunks.
- Peel and slice the yellow onions.
- Toss the beef, onions, and mushrooms into the crockpot.
- Add garlic, beef broth, Worcestershire sauce, salt, and pepper, and stir.
- Taste and adjust seasoning.
- Cover and cook on low for around 8 hours.
- Mix flour and sour cream until smooth, then return it to the crockpot with Dijon mustard.
- Add final seasonings and cook for an additional 30 minutes on low.
- Prepare egg noodles according to package instructions and drain.
- Serve the beef mixture over noodles and garnish with parsley.
Notes
For a gluten-free option, substitute cornstarch for flour as a thickener. Serve with crusty bread or a garden salad.
