Description

A cozy comfort food dish that combines savory sausages, wild rice, and a medley of veggies in a creamy sauce.


Ingredients

  • 1 tbsp olive oil
  • 400g (6) sausages, any flavor
  • 1 onion, chopped
  • 2 stalks celery, sliced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all-purpose flour
  • 750ml (3 cups) chicken or vegetable stock
  • 2 bay leaves
  • 100g (1/2 cup) wild rice
  • 3 medium potatoes, peeled and cut into chunks
  • 375ml (1 1/2 cups) single/light cream or half and half
  • Salt to taste


Instructions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Remove the sausage from its casing and cook until golden brown.
  3. Remove the sausage and drain excess fat, leaving about 2 tbsp in the pot.
  4. Add chopped onion, celery, and sliced carrots; cook for about 10 minutes.
  5. Add minced garlic and dried thyme; cook for an additional 30 seconds.
  6. Sprinkle flour over the veggies and mix until it forms a thick paste.
  7. Return the sausage to the pot and gradually pour in a bit of the chicken stock, stirring until combined.
  8. Add remaining stock, bay leaves, and wild rice; bring to a simmer for about 30 minutes.
  9. Add cubed potatoes and cook for another 15 minutes until tender.
  10. Pour in the cream and stir gently; season with salt and pepper to taste.
  11. Serve in bowls, garnished with fresh parsley.

Notes

Feel free to customize with different proteins or add frozen veggies for convenience.
