Description

A cozy and satisfying chicken casserole that’s easy to prepare with minimal cleanup.


Ingredients

  • 2 cups cooked chicken
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables (optional)
  • 1 package (about 6 oz) stuffing mix
  • 1/2 cup chicken broth
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, half of the shredded cheese, and frozen vegetables. Stir until well mixed.
  3. Season with salt and pepper.
  4. Spread the chicken mixture into a greased 9×13 inch baking dish.
  5. In another bowl, mix the stuffing mix with chicken broth until moistened. Spread evenly over the chicken mixture.
  6. Top with the remaining shredded cheese.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until bubbly and golden.
  8. Let it cool slightly before serving.

Notes

You can substitute turkey or hearty veggies for chicken, and use cream of mushroom or broccoli soup if preferred.
