Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup butter, softened


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. In a small bowl, combine oats, brown sugar, and softened butter. Mix until crumbly.
  6. Fill each muffin cup about two-thirds full with the batter, then sprinkle the streusel mixture on top.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool and serve.
