Description

A cozy, creamy beef stroganoff that cooks quickly and tastes like comfort.


Ingredients

  • 1 lb beef, sirloin or tenderloin, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tbsp flour
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Egg noodles or mashed potatoes for serving


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Cook the beef until browned, remove and set aside.
  2. Add onions and garlic to the skillet; cook until softened.
  3. Add mushrooms and sauté until tender.
  4. Sprinkle flour over the vegetables and stir. Gradually add beef broth, stirring until thickened.
  5. Reduce heat and stir in sour cream, return beef to skillet. Heat gently.
  6. Season with salt and pepper, adjust to taste.
  7. Serve over egg noodles or mashed potatoes, garnished with parsley if desired.

Notes

Avoid crowding the pan, and do not add sour cream to a hot pan to prevent separation.
