Description

A rich, creamy, and comforting beef stroganoff that’s surprisingly quick to make, perfect for a weeknight dinner.


Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the egg noodles according to package directions; drain and set aside.
  2. In a large skillet heat olive oil over medium-high heat. Add onions and garlic and sauté until onions are translucent.
  3. Add mushrooms and beef cooking until the beef is browned.
  4. Sprinkle the flour over the beef and stir to combine. Let it cook for a minute.
  5. Slowly add the beef broth while stirring and bring the mixture to a simmer.
  6. Stir in the sour cream and season with salt and pepper. Heat gently.
  7. Serve the beef mixture over the cooked egg noodles and garnish with fresh parsley.
