A simple and satisfying dish featuring tortillas filled with black beans and cheese, topped with a flavorful enchilada sauce.
Ingredients
- 8 tortillas
- 2 cups black beans, rinsed and drained
- 1 cup corn
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine black beans, corn, half of the cheese, cumin, chili powder, salt, and pepper in a mixing bowl.
- Layer a thin coat of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the bean and cheese mixture, roll them up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the tortillas and top with the remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Garnish with cilantro if desired and serve.
Notes
Customize the filling by adding veggies or swapping beans. Serve with sides like Mexican rice or salad for a complete meal.
