Description

A simple and satisfying dish featuring tortillas filled with black beans and cheese, topped with a flavorful enchilada sauce.


Ingredients

  • 8 tortillas
  • 2 cups black beans, rinsed and drained
  • 1 cup corn
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine black beans, corn, half of the cheese, cumin, chili powder, salt, and pepper in a mixing bowl.
  3. Layer a thin coat of enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the bean and cheese mixture, roll them up, and place seam-side down in the dish.
  5. Pour remaining enchilada sauce over the tortillas and top with the remaining cheese.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
  7. Garnish with cilantro if desired and serve.
