Description

A comforting casserole packed with cheesy tortellini and savory ground beef, perfect for weeknight dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 medium yellow onion, finely diced
  • 3 cloves fresh garlic, minced
  • 24 oz marinara sauce
  • 20 oz refrigerated cheese tortellini
  • 4 oz cream cheese, room temperature and cubed
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh basil, for garnish


Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until dark brown and crispy, about 6-8 minutes.
  2. Add the finely diced onion and sauté for about 5 minutes until translucent and soft.
  3. Stir in the minced garlic and cook for 60 seconds until fragrant.
  4. Lower the heat to medium and add marinara sauce, cream cheese, oregano, and red pepper flakes. Stir for about 3 minutes until creamy.
  5. Fold in the cheese tortellini, and if thick, add 1/4 cup of water.
  6. Pour the mixture into a baking dish, spreading it into an even layer.
  7. Top with mozzarella and parmesan cheese, ensuring it’s evenly covered.
  8. Preheat the oven to 375°F and bake for 20 minutes until bubbly and golden.
  9. If desired, broil for 2 minutes for added browning.
  10. Let it sit for 5 minutes, then garnish with fresh basil before serving.

Notes

Feel free to substitute ground beef with turkey or chicken, and adjust the pasta type as needed. This casserole also freezes well.
