A simple and delicious dish featuring juicy boneless skinless chicken thighs baked with a blend of spices, perfect for busy weeknights or meal prep.
Ingredients
- 2 pounds boneless skinless chicken thighs (about 8 pieces)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
Instructions
- Remove chicken from refrigerator 20 minutes before cooking. Pat completely dry with paper towels.
- Season both sides with salt. Wait 2 minutes, then add the remaining spices.
- Preheat oven to 400°F with the rack in the center position.
- Brush a baking sheet with 1 tablespoon of oil. Arrange thighs with space between each piece. Drizzle with the remaining oil.
- Bake for 18 minutes. Flip the thighs over. Bake an additional 14 minutes.
- Check that the internal temperature reaches 175°F at the thickest part of the chicken.
- Tent with foil and let rest for 3 minutes before serving.
Notes
Make sure to dry the chicken well before seasoning for better spice adherence. Let the chicken rest after baking for juicier results.
