A hearty and easy-to-make cowboy casserole featuring ground beef, black beans, corn, and tater tots, perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 package (2.5 oz) tater tots
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Drain excess fat.
- Stir in black beans, corn, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper.
- Spread the mixture evenly in a greased 9×13 inch baking dish.
- Top with tater tots and sprinkle shredded cheddar cheese on top.
- Bake for 30-35 minutes, until the tater tots are golden brown and crispy.
- Let it cool for a few minutes before serving.
Notes
This casserole is great for leftovers and can be made ahead of time. Just reheat before serving.
