Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1/2 cup yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine rolled oats and milk. Let it sit for about 10 minutes.
- Stir in yogurt, honey, vegetable oil, and vanilla extract. Mix well.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
For variations, you can substitute yogurt with applesauce and use different fruits like raspberries or chopped bananas.
