Description

A cozy and hearty potato soup that’s easy to make in a Crockpot. Perfect for dinner with delicious toppings.


Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup heavy cream or milk
  • Salt and pepper to taste
  • Bacon bits (for topping)
  • Green onions (for topping)
  • Sour cream (for topping)


Instructions

  1. In a Crockpot, add the diced potatoes, chopped onion, and broth. Mix well.
  2. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  3. Once cooked, mash some of the potatoes to thicken the soup.
  4. Stir in the cheese and heavy cream or milk, and cook for another 30 minutes on low.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with bacon bits, green onions, and sour cream as desired.
