Ingredients

  • 2 lb boneless skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 3/4 cup freshly grated Parmesan cheese
  • Fresh basil or parsley, chopped (optional garnish)


Instructions

  1. Season the chicken: Sprinkle salt and black pepper generously over both sides of the chicken.
  2. Place the chicken in the crockpot: Lay the chicken in an even layer.
  3. Sprinkle garlic, Italian seasoning, and red pepper flakes over the chicken.
  4. Scatter the chopped sun-dried tomatoes on top.
  5. Pour the chicken broth and heavy cream over the chicken.
