A comforting and flavorful crockpot version of the classic Kung Pao Chicken, perfect for busy nights.
Ingredients
- 1 lb chicken breasts
- 1 cup peanuts
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha (or to taste)
- 2 cups cooked rice (for serving)
Instructions
- Place chicken breasts in the crockpot.
- Add peanuts, bell pepper, onion, and garlic.
- In a bowl, mix together soy sauce, hoisin sauce, rice vinegar, and sriracha. Pour the sauce over the chicken and vegetables.
- Cook on low for 240-360 minutes or until the chicken is cooked through and tender.
- Shred the chicken and stir everything together.
- Serve over cooked rice.
Notes
For added flavor, marinate the chicken overnight in the sauce.
