Description

A comforting and flavorful crockpot version of the classic Kung Pao Chicken, perfect for busy nights.


Ingredients

  • 1 lb chicken breasts
  • 1 cup peanuts
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (or to taste)
  • 2 cups cooked rice (for serving)


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add peanuts, bell pepper, onion, and garlic.
  3. In a bowl, mix together soy sauce, hoisin sauce, rice vinegar, and sriracha. Pour the sauce over the chicken and vegetables.
  4. Cook on low for 240-360 minutes or until the chicken is cooked through and tender.
  5. Shred the chicken and stir everything together.
  6. Serve over cooked rice.

Notes

For added flavor, marinate the chicken overnight in the sauce.
