Description

A comforting and effortless dish featuring tender chicken and seasoned potatoes in a creamy garlic parmesan sauce, cooked in a slow cooker.


Ingredients

  • 2 lbs chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, divided
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp Italian seasoning
  • Fresh parsley, for garnish


Instructions

  1. Rinse and halve the baby potatoes, and set aside.
  2. In the bottom of the crockpot, layer the halved potatoes and season with salt, pepper, and Italian seasoning.
  3. Place the chicken breasts on top of the seasoned potatoes. Season the chicken with salt and pepper.
  4. In a bowl, mix chicken broth, heavy cream, minced garlic, and half of the Parmesan cheese until blended.
  5. Pour the creamy mixture over the chicken and potatoes.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, sprinkle the remaining Parmesan cheese over the dish and let it melt.
  8. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian option, replace chicken with hearty vegetables like mushrooms and zucchini.
