A comforting and effortless dish featuring tender chicken and seasoned potatoes in a creamy garlic parmesan sauce, cooked in a slow cooker.
Ingredients
- 2 lbs chicken breasts
- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese, divided
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp Italian seasoning
- Fresh parsley, for garnish
Instructions
- Rinse and halve the baby potatoes, and set aside.
- In the bottom of the crockpot, layer the halved potatoes and season with salt, pepper, and Italian seasoning.
- Place the chicken breasts on top of the seasoned potatoes. Season the chicken with salt and pepper.
- In a bowl, mix chicken broth, heavy cream, minced garlic, and half of the Parmesan cheese until blended.
- Pour the creamy mixture over the chicken and potatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, sprinkle the remaining Parmesan cheese over the dish and let it melt.
- Garnish with fresh parsley and serve hot.
Notes
For a vegetarian option, replace chicken with hearty vegetables like mushrooms and zucchini.
