Description

A hearty and creamy soup made with potatoes and ground beef, cooked effortlessly in a crockpot.


Ingredients

  • 4 medium potatoes, diced
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup shredded cheese (optional)
  • Chopped parsley for garnish


Instructions

  1. In a skillet, brown the ground beef with the onion and garlic until cooked through. Drain excess fat.
  2. In a crockpot, combine the diced potatoes, cooked beef mixture, beef broth, salt, pepper, thyme, and paprika.
  3. Cook on low for 6 to 7 hours or on high for 3 to 4 hours until the potatoes are tender.
  4. Stir in the heavy cream and cheese (if using) in the last 30 minutes of cooking.
  5. Adjust seasoning if necessary and garnish with chopped parsley before serving.
