A creamy, hearty soup that cooks itself in the Crockpot, perfect for lazy chefs.
Ingredients
- 1 lb ground hamburger
- 4 large potatoes, peeled and diced
- 1 onion, diced
- 3 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground hamburger over medium heat, then transfer to the Crockpot.
- Add the diced potatoes, onion, minced garlic, and beef broth to the Crockpot. Stir well.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until potatoes are tender.
- Stir in the heavy cream and shredded cheddar cheese.
- Season with salt and pepper to taste.
- Cook for an additional 30 minutes on low to heat through before serving.
Notes
Great for make-ahead meals and can be frozen for later.
