Description

A hearty and comforting soup made in a crockpot, featuring ground beef, potatoes, and creamy goodness that warms you up on a cold day.


Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chives for garnish (optional)


Instructions

  1. In a skillet, brown the ground beef and onion over medium heat until the beef is no longer pink. Drain excess fat.
  2. Transfer the beef and onion mixture to the crockpot. Add the diced potatoes, beef broth, garlic powder, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  4. During the last 30 minutes of cooking, stir in the heavy cream and cheddar cheese until melted and creamy.
  5. Serve hot, garnished with chives if desired.

Notes

For a lighter option, you can substitute ground turkey or chicken for beef. Additionally, use vegetable broth for a vegetarian version.
