A hearty and comforting soup made in a crockpot, featuring ground beef, potatoes, and creamy goodness that warms you up on a cold day.
Ingredients
- 1 lb ground beef
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- In a skillet, brown the ground beef and onion over medium heat until the beef is no longer pink. Drain excess fat.
- Transfer the beef and onion mixture to the crockpot. Add the diced potatoes, beef broth, garlic powder, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or until the potatoes are tender.
- During the last 30 minutes of cooking, stir in the heavy cream and cheddar cheese until melted and creamy.
- Serve hot, garnished with chives if desired.
Notes
For a lighter option, you can substitute ground turkey or chicken for beef. Additionally, use vegetable broth for a vegetarian version.
