Description

Tender chicken simmered in a rich coconut sauce, brightened with zesty lime, perfect for busy weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • Juice of 2 limes
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 cup chicken broth
  • Fresh cilantro, for garnish
  • Jasmine rice, for serving


Instructions

  1. Place the chicken breasts into the crockpot.
  2. In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, salt, pepper, cumin, and chicken broth.
  3. Pour the mixture over the chicken, ensuring it is well coated.
  4. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Once cooked, shred the chicken using two forks in the crockpot.
  6. Serve over jasmine rice and garnish with cilantro.

Notes

For an extra coconut kick, add unsweetened shredded coconut to the sauce. Use fresh lime juice for the best flavor.
