Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (13.5 oz) coconut milk
- Juice of 2 limes
- 1 tablespoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 cup chicken broth
- Fresh cilantro, for garnish
- Jasmine rice, for serving
Instructions
- Place the chicken breasts into the crockpot.
- In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, salt, pepper, cumin, and chicken broth.
- Pour the mixture over the chicken, ensuring it is well coated.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Once cooked, shred the chicken using two forks in the crockpot.
- Serve over jasmine rice and garnish with cilantro.
Notes
