A comforting and effortless one-pot meal featuring tender chicken, rich marinara sauce, cheesy tortellini, and vibrant spinach, all cooked to perfection in a slow cooker.
Ingredients
- 1 ½ lbs chicken breast
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion granules
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon red chili flakes
- 1 ½ cups chicken broth
- 1 lb cheese tortellini
- 1 cup shredded mozzarella cheese
- ½ cup heavy cream
- 2 cups baby spinach
- ⅓ cup grated Parmesan cheese
- Olive oil spray for preparation
Instructions
- Spray the inside of your slow cooker with olive oil spray.
- Arrange the chicken in a single layer at the bottom of the slow cooker.
- Pour marinara sauce over the chicken and add spices.
- Pour in chicken broth.
- Cover and set on LOW for 4 hours.
- Shred the chicken in the slow cooker.
- Add cheese tortellini, mozzarella, and heavy cream; stir.
- Cook on LOW for an additional 30 minutes.
- Stir in baby spinach and cook for another 10 minutes.
- Finish with grated Parmesan cheese and serve.
Notes
Store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for later use. Reheat to 165°F before serving.
