Description

Tender, flavor-packed chicken satay cooked slowly in a delicious peanut sauce, bringing the essence of Southeast Asian cuisine to your table.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped green onions (for garnish)
  • Chopped peanuts (for garnish)


Instructions

  1. In a bowl, combine peanut butter, soy sauce, honey, lime juice, garlic, ginger, chili powder, salt, and black pepper to create the sauce.
  2. Place chicken thighs in crockpot and pour the peanut butter sauce over the chicken.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  4. Shred the chicken directly in the crockpot and mix it with the sauce.
  5. Serve warm, garnished with green onions and peanuts.

For an extra flavor kick, consider marinating the chicken in the peanut sauce overnight.
