Tender, flavor-packed chicken satay cooked slowly in a delicious peanut sauce, bringing the essence of Southeast Asian cuisine to your table.
Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped green onions (for garnish)
- Chopped peanuts (for garnish)
Instructions
- In a bowl, combine peanut butter, soy sauce, honey, lime juice, garlic, ginger, chili powder, salt, and black pepper to create the sauce.
- Place chicken thighs in crockpot and pour the peanut butter sauce over the chicken.
- Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
- Shred the chicken directly in the crockpot and mix it with the sauce.
- Serve warm, garnished with green onions and peanuts.
Notes
For an extra flavor kick, consider marinating the chicken in the peanut sauce overnight.
