Description

A comforting and flavorful Italian dish featuring tender chicken breasts, zesty lemon, and salty capers, prepared effortlessly in a slow cooker.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 2 tablespoons butter (for sauce)
  • Cooked pasta (optional for serving)

Instructions

  1. Prep the Ingredients: Mince the garlic and squeeze the lemon juice into a measuring cup. Reserve some lemon zest if desired.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high flame. Season chicken with salt and pepper, sear until golden brown on both sides, about 5 minutes per side.
  3. Layer in the Crockpot: Transfer seared chicken to the crockpot, top with minced garlic and capers.
  4. Add the Liquids: Pour chicken broth and lemon juice over the chicken ensuring even coating.
  5. Season: Sprinkle Italian seasoning over the mixture and stir gently to combine. Cover and cook on low for 6 hours or high for 3 hours.
  6. Make the Sauce: Remove chicken from the crockpot and whisk butter into remaining juices until melted and thickened.
  7. Serve: Plate chicken cutlets, drizzle with sauce, and garnish with parsley. Serve over cooked pasta or rice if desired.

Notes

Store leftovers in an airtight container for 3-4 days, or freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
