Description

A comforting and creamy meal made effortlessly in your crockpot, filled with tender chicken, rice, and mixed vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup frozen mixed vegetables
  • 1 diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour the uncooked rice over the chicken.
  3. Add chicken broth and cream of chicken soup.
  4. Mix in frozen vegetables and diced onion.
  5. Season with garlic powder, onion powder, salt, and pepper.
  6. Stir gently to combine ingredients.
  7. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Once cooked, shred the chicken and mix everything together before serving.

Notes

For extra creaminess, add a dash of cream cheese or sour cream before serving. You can also add more veggies or use chicken thighs for a juicier result.
