Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup frozen mixed vegetables
- 1 diced onion
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Pour the uncooked rice over the chicken.
- Add chicken broth and cream of chicken soup.
- Mix in frozen vegetables and diced onion.
- Season with garlic powder, onion powder, salt, and pepper.
- Stir gently to combine ingredients.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and mix everything together before serving.
Notes
For extra creaminess, add a dash of cream cheese or sour cream before serving. You can also add more veggies or use chicken thighs for a juicier result.
