A hearty and comforting beef stroganoff made effortlessly in a crockpot, perfect for busy nights.
Ingredients
- 2 pounds Stew Beef or Beef Chuck
- 4 cups Beef Broth
- 8 ounces Mushrooms (optional)
- 1 medium Onion (diced)
- 4 cloves Garlic (minced)
- 2 tablespoons Dijon Mustard
- 2 tablespoons Worcestershire Sauce
- Salt and Pepper (to taste)
- 2 tablespoons Cornstarch (or Flour)
- 1 cup Sour Cream
- 8 ounces Egg Noodles, Pasta, Rice, or Mashed Potatoes
- Fresh Parsley (optional)
Instructions
- Cut the stew beef into bite-sized chunks.
- Dice the onion and mince the garlic.
- Place the beef, diced onion, garlic, and mushrooms into the crockpot.
- Add beef broth, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Whisk together cornstarch in cold water and stir it into the crockpot 30 minutes before eating.
- Stir in sour cream before serving.
- Serve over noodles, rice, or potatoes and garnish with parsley if desired.
Notes
Let the stroganoff simmer to enhance flavors. Avoid adding sour cream too early to prevent curdling.
