Description

A hearty and comforting beef stroganoff made effortlessly in a crockpot, perfect for busy nights.


Ingredients

  • 2 pounds Stew Beef or Beef Chuck
  • 4 cups Beef Broth
  • 8 ounces Mushrooms (optional)
  • 1 medium Onion (diced)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Worcestershire Sauce
  • Salt and Pepper (to taste)
  • 2 tablespoons Cornstarch (or Flour)
  • 1 cup Sour Cream
  • 8 ounces Egg Noodles, Pasta, Rice, or Mashed Potatoes
  • Fresh Parsley (optional)


Instructions

  1. Cut the stew beef into bite-sized chunks.
  2. Dice the onion and mince the garlic.
  3. Place the beef, diced onion, garlic, and mushrooms into the crockpot.
  4. Add beef broth, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well.
  5. Cover and cook on low for 6-8 hours or high for 4-6 hours.
  6. Whisk together cornstarch in cold water and stir it into the crockpot 30 minutes before eating.
  7. Stir in sour cream before serving.
  8. Serve over noodles, rice, or potatoes and garnish with parsley if desired.

Notes

Let the stroganoff simmer to enhance flavors. Avoid adding sour cream too early to prevent curdling.
