Description

A comforting and easy Crockpot Beef Stroganoff that combines hearty beef with a rich creamy sauce.

Ingredients

  • 2 pounds beef stew meat
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 12 ounces fresh cremini or white button mushrooms, cleaned and sliced
  • 1 1/4 cup beef broth
  • 2 tablespoons Dijon mustard
  • 2 tablespoons savory sauce alternative (or Worcestershire sauce)
  • 1/2 teaspoon onion powder
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 teaspoon dried thyme
  • 2 tablespoons cornstarch dissolved in 1/2 cup beef broth
  • 6 ounces cream cheese
  • 3/4 cup sour cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. In your crockpot, layer the diced onions, minced garlic, sliced mushrooms, and beef.
  2. Mix together the beef broth, Dijon mustard, savory sauce, salt, pepper, onion powder, and thyme and pour over the beef mixture.
  3. Cover the crockpot and cook on LOW for 6-8 hours or HIGH for 4-5 hours.
  4. About 20 minutes before serving, mix the cornstarch with the additional beef broth and stir until smooth, then add to the crockpot to thicken.
  5. Add cream cheese and mix until melted and creamy. Stir in the sour cream and parsley, and heat through.
  6. Serve the stroganoff over cooked egg noodles.

Notes

For best flavor, consider searing the beef before adding it to the crockpot.
