Description
A comforting and easy Crockpot Beef Stroganoff that combines hearty beef with a rich creamy sauce.
Ingredients
- 2 pounds beef stew meat
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 12 ounces fresh cremini or white button mushrooms, cleaned and sliced
- 1 1/4 cup beef broth
- 2 tablespoons Dijon mustard
- 2 tablespoons savory sauce alternative (or Worcestershire sauce)
- 1/2 teaspoon onion powder
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 teaspoon dried thyme
- 2 tablespoons cornstarch dissolved in 1/2 cup beef broth
- 6 ounces cream cheese
- 3/4 cup sour cream
- 1/4 cup chopped fresh parsley
Instructions
- In your crockpot, layer the diced onions, minced garlic, sliced mushrooms, and beef.
- Mix together the beef broth, Dijon mustard, savory sauce, salt, pepper, onion powder, and thyme and pour over the beef mixture.
- Cover the crockpot and cook on LOW for 6-8 hours or HIGH for 4-5 hours.
- About 20 minutes before serving, mix the cornstarch with the additional beef broth and stir until smooth, then add to the crockpot to thicken.
- Add cream cheese and mix until melted and creamy. Stir in the sour cream and parsley, and heat through.
- Serve the stroganoff over cooked egg noodles.
Notes
For best flavor, consider searing the beef before adding it to the crockpot.
