A creamy and easy-to-make dish that cooks itself in a crockpot, perfect for lazy nights.
Ingredients
- 6 pieces boneless, skinless chicken breasts (about 2 pounds)
- 1 can cream of chicken soup (10.5 oz)
- 1 package cream cheese (8 oz)
- 1 packet ranch dressing mix (1 oz)
- 1 cup chicken broth
- 1 package pasta (16 oz, penne or rotini)
- 1 cup shredded cheddar cheese
- Salt to taste
- Pepper to taste
- Optional: Fresh parsley (for garnish)
Instructions
- Place the chicken in the crockpot.
- In a mixing bowl, combine the cream of chicken soup, cream cheese, ranch dressing mix, and chicken broth; stir until smooth.
- Pour the creamy mixture over the chicken and season with salt and pepper.
- Cover and cook on low for 6 hours.
- About 15 minutes before the chicken is done, boil salted water and cook the pasta until al dente, then drain.
- Shred the chicken in the crockpot using two forks.
- Add the cooked pasta to the crockpot and mix well.
- Top with shredded cheddar cheese and cover for 5-10 minutes until melted.
- Serve hot, garnished with fresh parsley if desired.
Notes
Great for leftovers, can be stored in an airtight container in the fridge for a few days.
