Description

A creamy and easy-to-make dish that cooks itself in a crockpot, perfect for lazy nights.


Ingredients

  • 6 pieces boneless, skinless chicken breasts (about 2 pounds)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 package cream cheese (8 oz)
  • 1 packet ranch dressing mix (1 oz)
  • 1 cup chicken broth
  • 1 package pasta (16 oz, penne or rotini)
  • 1 cup shredded cheddar cheese
  • Salt to taste
  • Pepper to taste
  • Optional: Fresh parsley (for garnish)


Instructions

  1. Place the chicken in the crockpot.
  2. In a mixing bowl, combine the cream of chicken soup, cream cheese, ranch dressing mix, and chicken broth; stir until smooth.
  3. Pour the creamy mixture over the chicken and season with salt and pepper.
  4. Cover and cook on low for 6 hours.
  5. About 15 minutes before the chicken is done, boil salted water and cook the pasta until al dente, then drain.
  6. Shred the chicken in the crockpot using two forks.
  7. Add the cooked pasta to the crockpot and mix well.
  8. Top with shredded cheddar cheese and cover for 5-10 minutes until melted.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

Great for leftovers, can be stored in an airtight container in the fridge for a few days.
