Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chopped sundried tomatoes
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- In a separate bowl, mix together the sundried tomatoes, heavy cream, chicken broth, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken, making sure it’s well-coated.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
- Once cooked, shred the chicken with a fork and serve over pasta, rice, or mashed potatoes, garnished with fresh basil.
Notes
For spicy variation, add red pepper flakes. For a thicker sauce, mix cornstarch with water and add it towards the end of cooking.
