A delicious and easy-to-make crock pot jambalaya filled with chicken, sausage, and spices, perfect for a lazy day.
Ingredients
- 1 lb chicken breast, diced
- 1 lb andouille sausage, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 2 cups long-grain rice
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a Crock Pot, combine the chicken, sausage, bell pepper, onion, celery, garlic, diced tomatoes, and chicken broth.
- Stir in the rice, Cajun seasoning, and season with salt and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
- Garnish with sliced green onions before serving.
Notes
For variation, you can swap chicken for shrimp or use chickpeas for a vegetarian option.
