Description

A delicious and easy-to-make crock pot jambalaya filled with chicken, sausage, and spices, perfect for a lazy day.


Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. In a Crock Pot, combine the chicken, sausage, bell pepper, onion, celery, garlic, diced tomatoes, and chicken broth.
  2. Stir in the rice, Cajun seasoning, and season with salt and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.
  4. Garnish with sliced green onions before serving.

Notes

For variation, you can swap chicken for shrimp or use chickpeas for a vegetarian option.
