Ingredients
- 4 large potatoes, peeled and diced
- 1 packet ranch seasoning mix
- 2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
Instructions
- Peel and dice the potatoes into one-inch pieces.
- Layer the diced potatoes in the bottom of the crock pot.
- Sprinkle the ranch seasoning over the potatoes.
- Layer shredded cheddar cheese and crumbled bacon on top.
- Pour the chicken or vegetable broth over the ingredients.
- Cover and cook on low for 7-8 hours or high for 4 hours until potatoes are fork-tender.
- Stir in heavy cream or half-and-half after cooking.
- Season with salt and pepper to taste.
- Ladle into bowls and top with optional garnishes like more cheese or green onions.
