Description

A creamy, hearty potato soup with ranch seasoning, cheese, and crispy bacon, perfect for comfort on chilly evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes into one-inch pieces.
  2. Layer the diced potatoes in the bottom of the crock pot.
  3. Sprinkle the ranch seasoning over the potatoes.
  4. Layer shredded cheddar cheese and crumbled bacon on top.
  5. Pour the chicken or vegetable broth over the ingredients.
  6. Cover and cook on low for 7-8 hours or high for 4 hours until potatoes are fork-tender.
  7. Stir in heavy cream or half-and-half after cooking.
  8. Season with salt and pepper to taste.
  9. Ladle into bowls and top with optional garnishes like more cheese or green onions.

Notes

For a creamier texture, use an immersion blender or leave it chunky for a rustic feel. You can replace bacon with mushrooms for a vegetarian version.
