A creamy and dreamy potato soup that’s easy to make in a slow cooker, combining rich flavors with minimum effort.
Ingredients
- 6 large potatoes, peeled and diced
- 1 onion, diced
- 4 cups chicken broth
- 1 cup cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 cup crispy bacon, crumbled
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Place the diced potatoes and onion in the slow cooker.
- Pour in the chicken broth and cook on low for 6-8 hours or on high for 4 hours, until potatoes are tender.
- About 30 minutes before serving, stir in the cream cheese and cheddar cheese until melted and creamy.
- Add the crumbled bacon and season with salt and pepper.
- Serve hot, garnished with green onions if desired.
Notes
Avoid giant potato chunks by dicing properly, don’t skip on the cream cheese for a creamy texture, remember to season well.
