Description

A creamy and dreamy potato soup that’s easy to make in a slow cooker, combining rich flavors with minimum effort.


Ingredients

  • 6 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 cup crispy bacon, crumbled
  • Salt and pepper to taste
  • Green onions for garnish (optional)


Instructions

  1. Place the diced potatoes and onion in the slow cooker.
  2. Pour in the chicken broth and cook on low for 6-8 hours or on high for 4 hours, until potatoes are tender.
  3. About 30 minutes before serving, stir in the cream cheese and cheddar cheese until melted and creamy.
  4. Add the crumbled bacon and season with salt and pepper.
  5. Serve hot, garnished with green onions if desired.

Notes

Avoid giant potato chunks by dicing properly, don’t skip on the cream cheese for a creamy texture, remember to season well.
