A creamy and cheesy blend of tender beef, sautéed veggies, and tortellini cooked effortlessly in a slow cooker.
Ingredients
- 1 pound beef (thinly sliced)
- 1 bell pepper (sliced)
- 1 onion (sliced)
- 1 cup mushrooms (sliced)
- 2 cups tortellini (fresh or frozen)
- 1 cup cream (or cream cheese)
- 1 cup beef broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (provolone or mozzarella)
Instructions
- Place the sliced beef, bell pepper, onion, and mushrooms in the slow cooker.
- Add the beef broth, garlic powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the tortellini to the slow cooker.
- Stir in the cream and cheese until melted and mixed well.
- Serve warm.
