Description

A creamy and cheesy blend of tender beef, sautéed veggies, and tortellini cooked effortlessly in a slow cooker.


Ingredients

  • 1 pound beef (thinly sliced)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 cup mushrooms (sliced)
  • 2 cups tortellini (fresh or frozen)
  • 1 cup cream (or cream cheese)
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (provolone or mozzarella)


Instructions

  1. Place the sliced beef, bell pepper, onion, and mushrooms in the slow cooker.
  2. Add the beef broth, garlic powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the tortellini to the slow cooker.
  5. Stir in the cream and cheese until melted and mixed well.
  6. Serve warm.
