Description

Delicious and crispy zucchini fritters that are easy to make and perfect for snacks or side dishes.


Ingredients

  • 2 medium zucchinis
  • 1/2 cup Greek yogurt
  • 1/4 cup all-purpose flour (or almond flour for low-carb)
  • 2 large eggs
  • 1/4 cup chopped fresh herbs (e.g., parsley or dill)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)


Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a mixing bowl, combine grated zucchini, Greek yogurt, flour, eggs, herbs, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Spoon batter into the skillet, flattening each fritter slightly, and cook for 3-4 minutes on each side until golden brown.
  5. Transfer cooked fritters to a paper towel-lined plate to absorb any excess oil and serve warm.

Notes
