Ingredients
- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped fresh herbs (like chives or parsley)
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the mashed potatoes, cheese, bacon, herbs, and egg. Season with salt and pepper.
- Form the mixture into small balls or pops.
- Roll each ball in breadcrumbs to coat.
- Place the pops on a baking sheet lined with parchment paper.
- Brush with olive oil.
- Bake for 20-25 minutes or until golden brown and crispy.
