Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped fresh herbs (like chives or parsley)
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for brushing


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the mashed potatoes, cheese, bacon, herbs, and egg. Season with salt and pepper.
  3. Form the mixture into small balls or pops.
  4. Roll each ball in breadcrumbs to coat.
