Description

These Crispy Blueberry Streusel Muffins are simple, delicious, and perfect for any occasion, bursting with juicy blueberries and topped with a crumbly streusel.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1 teaspoon cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients until just mixed, then gently fold in the blueberries.
  5. In a small bowl, mix the brown sugar, oats, and cinnamon for the streusel topping.
