Description

A comforting and creamy white chicken chili perfect for cold evenings and gatherings.


Ingredients

  • 2 cups shredded chicken
  • 2 cans white beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cheese, avocado, or tortilla chips for serving


Instructions

  1. In a slow cooker, combine the shredded chicken, white beans, diced onion, minced garlic, chicken broth, cumin, chili powder, and a pinch of salt and pepper.
  2. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Serve hot with toppings of cheese, avocado slices, or tortilla chips.

Notes

Use rotisserie chicken for quick preparation. For added heat, include diced jalapeños or hot sauce.
