Description

A heartwarming creamy vegetable soup loaded with tender vegetables, making it the perfect dish for chilly evenings.


Ingredients

  • Mixed vegetables (carrots, peas, corn, etc.)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (of choice)
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, cooking until translucent (3-5 minutes).
  3. Toss in mixed vegetables and sauté for another 5 minutes.
  4. Pour in vegetable broth and bring to a gentle simmer for 15-20 minutes until vegetables are tender.
