A heartwarming creamy vegetable soup loaded with tender vegetables, making it the perfect dish for chilly evenings.
Ingredients
- Mixed vegetables (carrots, peas, corn, etc.)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (of choice)
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, cooking until translucent (3-5 minutes).
- Toss in mixed vegetables and sauté for another 5 minutes.
- Pour in vegetable broth and bring to a gentle simmer for 15-20 minutes until vegetables are tender.
- Stir in heavy cream and shredded cheese until melted.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh herbs if desired.
