Ingredients

  • 2-4 Chicken breasts
  • 1 can Cream of chicken soup
  • 1 cup Chicken broth
  • 1 cup Rice (white, brown, or your choice)
  • 2 tablespoons Butter
  • 1 medium Onion, chopped
  • 2-3 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Parsley, optional


Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Sauté chopped onions and garlic until soft.
  3. Add chicken breasts and cook until browned on both sides.
  4. Pour in cream of chicken soup and chicken broth; stir to combine.
  5. Add salt and pepper to taste.
  6. Simmer for 15-20 minutes until chicken is cooked through.
  7. Meanwhile, cook rice according to package instructions.
  8. Serve the creamy chicken mixture over rice, garnished with parsley if desired.

Notes

For a healthier version, add more veggies like peas or bell peppers. You can also substitute chicken for turkey or tofu.
