Ingredients
- 1 lb Italian sausage (hot or sweet)
- 4 medium potatoes (diced)
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 4 cups chicken broth (low sodium if desired)
- 1 cup heavy cream
- Salt and pepper (to taste)
- Optional: parsley (for garnish)
Instructions
- In a large pot or Crock Pot, brown the Italian sausage over medium heat.
- Add the onion, carrots, and celery, sautéing until the vegetables are tender.
- Stir in the diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer for about 15 to 20 minutes, or until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper.
- Cook for an additional 5 minutes.
- Serve hot, garnished with parsley if desired.
